I'm going HDMI from the Xbox to the audio stripper box which then passes the PCM audio to the sound amps and outputs the video through HDMI which I have going into the projector using a HDMI to DVI cable. The Xbox is displaying it's outputting DVI in the settings not HDMI. Is there a way to 'trick' the Xbox at all? I'm guessing there isn't.

PCM is really like default audio (uncompressed audio), so I'm assuming most of the Xbox's audio settings are to change audio from default. Make sure nothing it set for 6-channel (5.1), you want 2.0 audio. So, it seems like the Xbox is set to output digital audio thru the HDMI output and you want to output digital audio to the optical output.
