Pull the RCA end apart so it can plug in with the HDMI cable plugged in. Then go into your Xbox Settings - Console settings - Audio Digital... select the first/top option. The bottom 2 options send audio into the HDMI cable and the causes a conflict/crash/reboot. Select the top option and that activates the use of the red/white RCA cable for use.

Microsoft do a slimline dongle for audio only for use with hdmi but you can also hack your cable so it works like such a cable. If you look here, you should be able to disconnect the VGA sensing line which is pin 20 by just cutting the cable. Then the 360 will not know its there but you will still be able to use optical output.
