Was able to get the Line-in to show in recording devices! Here's how: In the Creative Console there's a section called "Jacks" that doesn't exist in the XP UI. Checking Line-in allowed it to show up in recording devices. However, it appears Win7 and even Vista drivers have crippled "What You Hear" (or Stereo Mix) recording abililty.
