The videos with no sound over Tversity still have sound when played on my computer, and I can get them to stream audio through Tversity only if I set the transcoder to "Always Transcode". However, transcoding slows down my computer and I would think that Tversity should know when it is and is not appropriate to transcode.

The TVersity Media Server can display subtitles only when the media is transcoded and assuming your ffdshow filter is configured to do so. However, media not transcoded by the media server is not likely to have subtitles displayed since it would be up to the device to display it and most devices do not support it.
