With SKY HD you attach the optical or coax audio out to a relevant input on the AV amp. With a regular SKY box, you attach the left and right analogue audio outputs from the box to the relevant inputs on the receiver. Note, you only get DD 5.1 surround with the HD box. The regular SKY boxes are stereo only.

Digital Audio Output HDMI / Dolby Digital - so that would seem to be the recommended setting (makes sense although my view on this is always - "whichever you prefer" )
