At present Plex does not support DTS audio. Content with DTS audio will be transcoded to AC3. Per their FAQ they're working with MS to bring DTS audio to the Xbox One. That said, videos that have 5.1 sound encoded directly should play 5.1. One thing I would suggest is going to the Xbox Setting, then your sound settings, and selecting 5.1 Uncompressed.

Click on your username (top left) and go to Settings > Audio. Click on Device Type & set it to HDMI. Click on Device & set it to your receiver (receiver needs to be on to show up). It seems that DTS-HD audio won’t play. arc is definitely enabled on tv (anynet+) 3)soundbar is fairly simple, it’s plugged into the arc HDMI of the TV.
