The problem is with the Onkyo . . . when I go into the HDMI configuration screen, I set "CBL/SAT" to use HDMI3. Then in the Optical Input config screen I set "CBL/SAT" to use OPT1. However, the Onkyo seems to be ignoring (or overriding) the Optical setting and is drawing audio from the HDMI cable instead (which means no 5.1).

If I were you I would run everything through the Onkyo 605 as it is a great piece of equipment and it will in fact let you take full advantage of HD audio which you cannot do without using HDMI for audio as optical cannot handle the bandwidth load. So get cracking and hook the HDMI up to your Onkyo and listen to your favorite Blu-ray!

Check your settings and look for the "HDMI Audio Out" under Hardware. I have a Onkyo TX-SR805 and it's 2 generations older than your receiver. Also, be sure the default source for the Blu-ray input is set for HDMI, not analog or optical. Lastly, give that receiver a lot of ventilation room above the heat sinks as Onkyos traditionally run hot.
