I've toyed around with the calibration settings, and a 0ms setting for video and a 200ms setting for audio works best, but the audio calibration would be just perfect if it was 250ish. Not a huge deal, but constantly playing faster than the music can throw me off on fast strumming passages.

I really hate GH5's calibration utility. Anyway, I found my calibration to be 0-11 ms on Video and around 100ms on audio. I have a Sony 40" Bravia hooked up through hdmi. You may see if yours is something similar. As Snowcon3 said, if you have another rhythm game already calibrated, try copying those settings over manually.

Watching a bit of that video, it suggests that RB has separate audio/video calibration settings. GH3 does not. Which, in my experience, means it's nearly impossible to adjust properly if you have both video and audio lag, of different durations. Basically you're hosed at that point, sell GH3 and buy some hookers and blow.
