You would need to set up a new Dolby Preset and in the Audio Encoding Tab select the Audio Encoding Mode for 5.1. (Not sure if you did that?) And then bring the m2v (the encoded video) and the audio files into DVD SP.... This movie does not show the 5.1 Settings, but shows how to set up Compressor in general, including setting up the Dolby section.

Now remove the h.264 video from the Toast Video window and add the .m2v video in its place. Toast should ask you for a matching audio file. I have several of these in .WAV files, and a few that are in .DTS files. I'm able to burn the .WAV files with no problem. They play 5.1 sound as expected. I'm able to burn .DTS files that are sampled at 44.1k, but not the higher sampled 96k files. That makes me think that the sample rate is the problem.
