You can't use the headphone jack for recording an external audio source into the iPhone. The headphone jack is audio out and external microphone in only. A 3 ring jack audio in jack for an iDevice is wired for stereo left and right and the third ring is for external microphone audio in only. Not for an additional external line in audio source.
