I don't know why considering Handbrake is free, open-source software. AAC is defaulted because the file size is smaller due to AAC just being a more efficient audio format than Dolby Digital, DTS or PCM. It is possible to compile your own encoder and use that. All my encodes have Dolby Digital (AC3), either 5.1, mono or stereo.
