#2 Use 16-bit single stereo (2 tracks) unless you intend to perfom in-camera "overdubs" (assuming your camera supports this - many do not) in which case 12-bit means there's "room" in the signal for an extra stereo pair for a voiceover or music or what have you.

In my experience (based on the two DV cams I own), 12 bit audio is sampled at a frequency of 32KHz whereas 16 bit audio is sampled at 48KHz. As your DV footage is going to DVD, and DVD specs require 48KHz audio, 16 bit is the one to go for.

The audio rates used are based on the DV specification and the bandwidth allocated on the tape for audio. 4 channels at 12-bit and 32 kHz equals the data rate of 2 channels at 16-bit and 48 kHz. The DV spec was probably finalized back in the early to mid 1990s, when the 80486 chip ruled and 200 megabytes was considered a huge hard drive.
